Review: TC Craft Blanco Tequila

TC Craft Tequila was founded by two brothers from Nashville Tennessee, Todd and Chad Botorff.  They started with a goal to create the worlds best tequila  That goal led to a 10 year journey that led them to Melly Barajas Cardenas, the Founder and Master Distiller at Vinos y Licores Azteca.  TC Craft Tequila is named after the founders Todd & Chad.  TC Craft Blanco is made from 100% blue agave grown in rich red clay in the Highlands of Jalisco Mexico.  The agave are grown for 8-9 years with no chemical herbicides or pesticides.  The trimmed agave is slow roasted in brick ovens for three days.  Once extracted the juice is fermented in stainless steel tanks with all natural agave yeast for 80 hours.  The spirit is double distilled and bottled additive free.  The aroma leads with cooked agave.  Additional time brings out citrus and peppercorn.  The sweet agave and mineral entry is very clean and fresh.  Citrus and strawberry arrive building to a creamy cocoa, mineral, lemon, and agave peak.  It fades with strawberry and cocoa and finishes with lemon peel, fresh cooked agave, a hint of mint, and a sprinkle of black pepper.
