Review: Hatch Vodka

by Jeff Ellingson

Hatch Vodka is distilled from 100% Wisconsin Honey produced by 10 million Door County honey bees at Hatch Distilling Company.  Chris Roedl opened his distillery in 2018.  He grew up working in his family’s egg production business in Lake Mills Wisconsin.  Prior to founding Hatch, Chris was COO for Door Peninsula Winery, and Door County Distillery.  Hatch also crafts Gin with a honey spirit base and locally foraged botanicals, bourbon, and apple brandy with grains and apples sourced from local organic farms.  The aroma leads with honey.  Additional time brings out butterscotch and green banana notes.  The sweet honey entry has a soft oily feel.  Vanilla arrives building to a smashed banana peak.  It fades with honey and finishes with vanilla and banana leaving a warm mild peppery sting, mineral, and banana peel taste.
