Review: Don Ramon Platinum Reposdo Cristalino

Don Ramon Platinum Reposado Cristalino was released in the US along with the previously reviewed Don Ramon Platinum Anejo Cristalino March 2021.  Don Ramon Tequila was founded in 1996.  It is made from 100% Blue agave grown in the Highland region.  The grinding and extraction process are done cold.  The juice is fermented in open air tanks with classical music playing to help control the movement of the yeast to stimulate the aroma and flavor.  After a double distillation the spirit is aged in both French and American oak for 4 months.  After blending a multi step filtration process removes most of the color and piquancy.  The aroma leads with agave, baked apple, vanilla, oak, caramel and coconut.  Additional time brings out chocolate and coffee notes.  The sweet agave, cinnamon spice, citrus, and caramel entry is joined by toasted oak building to a toffee and herbal agave peak.  It fades with mocha, and wood spice and finishes with French oak, lemon peel, salted caramel, and black pepper.
