Review: Bumbu XO Rum

Bumbu Xo Rum was just released.  It follows the successful release of The Original Bumbu Rum, aka Lil Wayne’s favorite rum. Bumbu takes its name from the navy strength rum softened with native fruits and herbs of the Caribbean created by 16th and 17th century sailors of the West Indies that they lovingly named Bumbu.  Bumbu XO is crafted quite differently than both the early sailors recipe, and The Original Bumbu.  The Original Bumbu is made from sugar cane sourced from eight Caribbean islands, distilled in Barbados, infused with spices, fruits, and herbs and bottled at 70 proof.  Bumbu XO is made from locally grown Panamanian sugar cane and pure spring water.  It is distilled in a still build in 1912 at a distillery in Panama dating back to 1890.  The rum is aged up to 18 years in bourbon barrels and then finished in sherry casks made from white oak grown in the Andalusia region of Spain.  Bumbu XO pours to a rich mahogany color.  The aroma is cane sugar, vanilla, coffee, oak, cinnamon, and nutmeg.  Additional time in the glass brings out toffee, burnt chocolate, and fresh peeled orange.  The sweet cane sugar, orange, caramel, and chocolate entry is joined by vanilla cream and baking spice, building to a juicy orange and toffee peak.  It fades with runny caramel and cinnamon flavor.  The silky smooth finish has notes of coffee, oak, vanilla buttercream, and nutmeg.

1 Oz. Spiced Demerara

6 Dashes Sycophant Bitters

1 Expressed Orange Peel

2 Brandied Cherries

Place the Bumbu XO, spiced Demerara, and bitters in a mixing glass.  Add Ice and Stir.  Then strain into a rocks glass over one large ice cube and 2 brandied cherries.  For the garnish pare an orange peel and express the oils from the back of the peel over the old-fashioned.  Rub the peel around the rim of the rocks glass and drop peel in glass.
