Review: Ave Tequila Blanco

Ave Tequila Blanco is crafted from 100% blue agave, single estate grown for 5-7 years on 2000 acres, over 5000 meters above sea level.  From seed to soil to distillation every element is carefully controlled.  Ave is currently the only tequila distilled at Cortes Y Camarena.  The hand selected agave is cooked in traditional brick ovens for 60 hours.  The extracted juice is fermented for 72 hours with a proprietary yeast and then double distilled.  The aroma leads with cooked agave, herbal, and caramel.  Additional time brings out vanilla, cooked pasta, citrus, sea salt, and black pepper.  The cooked agave entry is joined by herbal, and citrus building to a cinnamon apple, earthy agave, and vanilla peak.  It fades with orange, and cacao, and finishing with mineral, orange peel, fresh cooked agave, and a sprinkle of sea salt and black pepper.
