Review: Fieldnotes Organic Vodka

Fieldnotes Organic Vodka is crafted in Downtown LaCrosse Wisconsin in a 10,000 square foot distillery that is geothermal powered.  LaCrosse Distilling company opened the doors September 1 2018 after about 4 years of planning by co-founders Nick Weber, Chad Staehly, and Mitch Parr.  Mitch was a brewer for Lagunitas Brewing Company before joining Nick and Chad to become the head distiller.  They currently also produce Downtown Toodelo Rock and Rye, Robbers Straight Rye Whiskey, Heady Bella Coffee Whiskey, and Fieldnotes Gin.  The spirits are distilled on a 1500 liter Kothe still.  A smaller 75 gallon Artisan still is used to produce their gin.  Fieldnotes Organic Vodka is made with 100% organic yellow dent corn grown on local organic family farms.  They tested 50 different varieties of heirloom corn before selecting organic yellow dent corn.   The spirit is double distilled, triple filtered, and proofed with pure water sourced from the regions glacial aquifers.  The aroma leads with musty corn.  Additional time brings out black pepper, grapefruit, and butterscotch.  The sweet grapefruit and earthy yellow corn entry is joined by watermelon building to a lemon grapefruit peak.  It fades with watermelon and butterscotch and finishes dry, mineral, bittersweet and peppery with lemon peel, anise, and black pepper.
