Review: Tullamore DEW XO Caribbean Rum Cask Finish

Tullamore DEW XO Caribbean Rum Cask Finish is made with the same recipe as Tullamore DEW Original.  It is triple distilled and a triple blend of pot still, malt and grain Irish whiskey.  The whiskey is finished in first fill XO rum casks previously used to age Demerara rum.  Tullamore DEW XO Caribbean Rum Cask Finish pays tribute to the role of Irish immigrants in the development of rum in the Caribbean in the 17th century.  This is not the first Tullamore DEW finished in a second cask.  They also produce Tullamore DEW Cider Cask Finish.It pours to a copper color.  The aroma is oak, malted cereal, banana, nutmeg, clove, strawberry and orange citrus with a peppery backing.  The sweet entry has malted cereal with vanilla cream, strawberry, and citrus flavor.  Banana arrives building to a strawberry banana citrus peak.  The fade is mineral and malty, before finishing warm, peppery, and dry with orange peel, caramel, spice, banana, oak, and almost as an exclamation point, watermelon.  Weighing in at 86 proof there is more flavor intensity, and more of an alcohol presence than the Original Tullamore DEW.
