Review: Corbin Cash Sour Mash Bourbon

Corbin Cash Sour Mash Bourbon is crafted by David John Souza on a family farm in the San Joaquin Valley that his family has owned for nearly 100 years.  He named the distillery after his son Corbin Cash Souza.  Corbin Cash Sour Mash was awarded Best Bourbon at the Los Angeles Spirts competition.  Three years ago I reviewed Corbin Sweet Potato Vodka, now named Corbin Cash California Estate Grown Sweet Potato Vodka, so I’m not surprised by their most recent award.  The bourbon is crafted from a 70% corn, 25%, rye, and 5% malt mash bill.  The corn comes from good friends at the neighboring Scoto Brothers Farm.  The barley used is grown in California and malted at Admiral Malting in Alameda, and the rye is grown on their own farm.  It’s a true California Bourbon.  The wood in the barrels is a combination of Missouri and Minnesota grown American White Oak.  The wood is seasoned for 36 months before becoming a barrel.  After construction the barrel in Fresno California it is charred to Corbin Cash specifications.  The whiskey is mashed fermented, and distilled on an Arnold Holstein copper still at Corbin Cash Distillery in Atwater California.  They add some of the spend mash into subsequent batches to create a sour mash.  It is then laid down at 110 proof for a minimum of 4 years, and bottled at barrel proof of 106. Review: Alberta Premium Cask Strength Rye

Alberta Premium Cask Strength Rye has received a Double Gold medal at the 2020 and 2021 San Francisco World Spirits Competition, won 1st Place Best Canadian Whisky at the 2021 International Whisky Competition, and was named World Whiskey of the Year 2021 by one of the biggest names in the Whiskey World, the author of the 1 million copy selling Whiskey Bible, Jim Murray.  Most spirits can claim to be award winners but its the quality of the competition and the names behind the awards given to Alberta Premium Cask Strength Whiskey that’s most impressive.  Not bad for a whiskey that was originally released in 2020.  Alberta Premium is crafted by Alberta Distillers from 100% Canadian prairie rye grown by local farmers and refreshing glacier fed Rocky Mountain spring water.  Alberta Distillers was founded in 1946 and Alberta Premium debuted in 1958.  They are one of the first and very few distillers to create a true 100% rye whiskey.  They are so well respected they supply the 100% rye used in Masterson’s, Jefferson’s, and Whistle Pig’s 10 Year old ryes.  Alberta Premium Cask Strength Rye is aged for a minimum 5 years in new charred oak and non chill filtered.  It is bottled at 127-134 proof.  The bottle we are reviewing today was bottled at 127.4 proof. Review: Two Trees Peanut Butter Whiskey

Two Trees Peanut Butter Whiskey is one of nine flavored whiskeys made at Two Trees Distilling in Fletcher North Carolina.  The other flavors include Sea Salted Caramel, Candy Apple, Scorched Brown Sugar, Carolina Peach, Michigan Cherry, Cinnamon Spice, Golden Honey, and Crisp Apple.  Chad Slagle and Keith Mort created a proprietary process that mirrors and accelerates the natural process that occurs when whiskey is aged in wooden barrels.  The physical changes in the liquid that typically take years to achieve, they can accomplish in a single working day.  While no alcohol is distilled in their 23,000 square foot distillery, they toast and char every bit of wood used.  Read more »
