Review: Tequila Ocho Plata 2022 La Estancia

Tequila Ocho Plata La Estancia is one of four plata tequilas crafted by Master Distiller Carlos Camarena from 100% single estate Weber Blue agave harvested in 2022.  It is distilled from agave grown in San Diego De Alejandria on Rancho La Estancia.  La Estancia (The Stay) is a hilly 17 acre field located 6095 feet above sea level.  It’s terrain is known for gray soil as a result of the calcium rich limestone and organic matter.  Like all Tequila Ocho tequilas the agave is slow cooked for 48 hours in old brick ovens.  The juice that results from the first 8 hours of cooking is discarded because of the bitter taste.  After resting in the oven for 24 hours the juice is extracted and fermented in open air pine wooden vats for 100 hours with natural airborne yeast, then double distilled.  The aroma leads with herbal agave, anise, and black pepper.  Additional time brings out mint.  The sweet cooked agave entry is joined by citrus building to a creamy lime and herbal agave peak.  It fades with lime and mint finishing with mineral, anise, mint, lime peel, and black pepper.
