Review: Tequila Ocho Plata 2023 San Jeronimo

Tequila Ocho Plata 2023 San Jeronimo is the fourth in our series of 6 Tequila Ocho Plata reviews.  The blue agave is single estate sourced from the San Jeronimo field, located 5 miles outside of Arandas.  The field is used exclusively for growing agave and is hilly and rocky with rich red soil.  1200 tons of overripe agave was harvested with pinas reaching 80 pounds, with a sugar content of 32%.  The agave is slow cooked for 48 hours in old brick ovens.  After resting for 24 hours the juice is extracted and fermented with natural airborne yeast in open air pine wooden vats for 100 hours, then double distilled.  The aroma leads with cooked agave, floral, grapefruit, orange, and cinnamon.  Additional time brings out herbal, anise, caramel, and peppermint.  The cinnamon and cooked agave entry has a soft mouth feel, herbal notes arrive building to a caramel, and citrus peak.  It fades with orange and finishes with mineral, orange caramel, and white pepper.
